I would say that it's the same reason we have scripture. If we, as humans, could distinguish Spirit from flesh then we would be led by the Spirit without scripture and without example. The fact is we don't know, our hearts are wicked, the way that seems right to us leads to death and we don't even know what to pray. God therefore, in His great mercy and wisdom, left us scripture as a guide to base every idea and as a tool to convict and cut to the marrow. He also left examples of what it's like to walk according to scripture for us to see what it looks like. Not to imitate; but use as an example to compare ourselves if we are indeed being led by the Spirit. If it seems right to us, and we know in our hearts it is - then the bible teaches that it's wrong and wicked. That example then becomes vital, and those whom are walking closely with the Lord like a magnet drawing us to the truth.

I'm not so sure about this. Adam and Eve ate from the tree of knowledge of good and evil. So don't we know the difference between right and wrong? Doesn't Romans cover this? That we are without excuse? Aren't the people that never hear the gospel going to be judged by this principle?

Also, before the law was given, the world was judged with a flood with only Noah being found as one who walked with God. He knew right from wrong. So did Job. So did Cain, but he chose to still murder his brother because he didn't 'master' or 'control' the sin that the Lord warned him was ready to consume him. But he still knew what was right and what was wrong.
